Chicken With Cherry Tomatoes & Okra Recipe

Savor the irresistible blend of savory chicken and vibrant vegetables, bursting with rich flavors and textures—an unforgettable, wholesome meal for any occasion.

Ingredients

1/2 Organic Whole Chicken
250 g roughly chopped okra
100 g diced bacon
1 onion sliced into rings
150 g cherry tomatoes
1 clove of garlic, chopped
chopped seedless finger pepper (to taste)
chopped green onions
juice of 1/2 orange
100 ml dry white wine
Salt, pepper, and olive oil to taste

Directions

Season the chicken pieces with salt and pepper.
In a large skillet, cook the diced bacon over medium heat until crispy.
Set aside once cooked, without removing the bacon fat.
Add the sliced onion and chopped garlic to the skillet. Sauté until the onion is translucent.
Add the chicken pieces to the skillet and brown on all sides.
Add the chopped okra and cherry tomatoes to the skillet, stir to combine.
Reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
Stir in the cooked bacon and let it heat through for a couple of minutes.
Serve hot, garnished with fresh herbs if desired.

Smoked Salmon & French Bean Salad

 

Enjoy a refreshing and nutritious dish that combines the rich flavors of smoked salmon with the crisp texture of blanched French beans. It’s perfect for a light lunch or a vibrant appetizer.

Ingredients

200g smoked salmon, sliced
200g pre-cooked French green beans
1 small red onion, thinly sliced
1 avocado, diced
1 handful of cherry tomatoes, halved
2 tbsp capers, drained
1 lemon, juiced
3 tbsp olive oil
Salt and pepper to taste
Fresh dill for garnish

Directions

Bring a pot of salted water to a boil.
Add the French beans and cook for only 1-2 minutes until tender-crisp.
Drain and immediately plunge them into ice water to stop the cooking process, for a few minutes or until cooled.
Drain again and set aside.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
In a large bowl, assemble the salad with the French beans, red onion, avocado, cherry tomatoes, and capers.
Drizzle the dressing over the salad and toss gently to combine.
Gently fold in the smoked salmon slices.
Transfer the salad to a serving platter, garnish with fresh dill, and serve immediately.

Ingredients

2 eggs
250 g Ground Beef
15 g hard bread crumbs
30 g Parmesan Cheese (grated)
1 onion
Dehydrated or frozen basil
1 Canned Whole Peeled Tomatoes
120 g spaghetti or other long pasta (linguine), raw
Salt

Directions

Mix the ground beef, eggs, cheese, and bread crumbs in a small bowl and shape into balls.
Cook the sauce in a small non-stick saucepan: dry-fry the onion, then add the tomatoes and basil, mashing with a fork.
Simmer over low heat, adding a little water if necessary.
Add the meatballs and cook for around 20 minutes.
Cook the pasta in plenty of boiling salted water.
Drain and serve the spaghetti immediately.
Pour the cooked tomato sauce over the pasta and add the meatballs.
