Whole Duck With Potatoes

Whole Duck With Potatoes


A classic French-inspired dish, courtesy of Villa Germania: succulent duck, slow-roasted with aromatic herbs, paired with crispy roasted potatoes.

Ingredients

1 Whole Duck Headless
Bay leaves
Sprigs of thyme
Chopped onions
1.5 kg small potatoes
Salt and pepper to taste
White wine

Directions

Thaw the duck in the refrigerator for 12 hours.
Season with salt, bay leaves, thyme, and onions.
Place it breast side up in a deep roasting pan, adding half a cup of water.
Wash the potatoes well and cook in salted water until al dente, then set aside.
When the duck is golden, remove the liquid that has formed in the pan, add the potatoes and another half cup of water.
Baste the duck with the sauce that has formed until it is well browned.
Remove the sauce, place it in another dish, add the bouquet and white wine, and return to the oven for another 10 minutes.
Serve immediately.

Strawberry Tart

Strawberry Tart


A timeless French classic, our strawberry tart is a breeze to make, featuring our easy shortcrust pastry. A dreamy custard and juicy strawberries cradled in a crisp, buttery crust make it a summery treat anytime.

Ingredients

1 roll shortcrust pastry
1 pack frozen strawberries
200 g plain fromage blanc 0% fat
200 ml cream 30% fat
2 eggs
120 g brown sugar
1 tbsp liquid vanilla

Directions

Wash and drain the strawberries.
Preheat the oven to 180°C (gas mark 6).
Roll out the shortcrust pastry in a non-stick pie dish.
Beat eggs and sugar vigorously.
Add the fromage blanc, cream, and liquid vanilla.
Pour the mixture over the pastry.
Place the tart in the oven and bake for around 30 minutes, until lightly colored.
Leave to cool completely.
Split the strawberries in half and place on top of the tart.
Serve as desired.
