Join the hype and make your own spinach pizza with a tasty twist. And the secret? Add the artichoke bottoms with sprinkling of porcini mushrooms to make it extra delish.
3 cups frozen pre-cooked spinach
1 cup frozen artichoke bottoms, chopped
1/2 cup frozen porcini mushrooms, sliced
1 lb pizza dough
2 cloves garlic, thinly sliced
1 tbsp olive oil
1/2 cup ricotta cheese
1/2 cup grated parmesan cheese
2 tbsp cheddar cheese
2 tsp lemon zest, finely grated
salt and pepper
flour for prep
Heat oven to 260°C.
Sprinkle flour on a surface.
Shape pizza dough into a circle.
Dust a baking sheet with flour.
Place the dough on the dusted baking sheet.
Toss spinach, artichoke hearts, garlic, olive oil, and a sprinkle of pepper in a bowl.
Scatter over pizza dough.
Mix the ricotta cheese, cheddar, and lemon zest with a sprinkle of salt and pepper in a blender.
Spread over the top of the pizza dough.
Add the sliced mushrooms, and spread on top.
Top with grated parmesan.
Bake until the crust is golden brown.
