Honey Glazed Pork Baby Back Ribs

This is a simple recipe that comes out great and festive. The taste of sweet honey is a perfect combination to the rest of the ingredients making a sweet, salty and lightly spiced glaze. You can add this to your holiday preparations as though it takes sometime in the oven, active preparation time takes less than 15 minutes. Your family will definitely enjoy it!

INGREDIENTS

2 slabs Pork ribs
1/2 cup honey
1 tbsp salt
2 tbsp freshly ground pepper
1 tsp dry mustard
1 tsp ground ginger
2 tbsp soy sauce
2 tbsp chili-garlic sauce
1 tbsp fresh lime juice
1 tbsp butter

DIRECTIONS

Prepare the baby back ribs by removing the thin membrane on the inner side of the slab. Slice on one side and pull the whole skin gently off. Peeling this skin makes for a more tender meat. Season slab with salt and pepper and wrap in aluminum foil. Bake at 325°F for 2 to 2.5 hours on a baking sheet until tender and meat falls easily off the bone.

Prepare the glaze. Combine honey, mustard, ginger, soy sauce, garlic chili sauce, lime juice and butter and boil in a saucepan over high heat. Keep an eye on the mixture and make sure to stir and avoid burning. Reduce to low heat when slightly reduced, and simmer until mixture is reduced by half.

Take the baked ribs from aluminum foil and return to an aluminum wrapped baking sheet. Glaze with the honey mixture on both sides using a basting brush. Return to the oven heated to Broil temperature (500°F ) for another 5 to 7 minutes. Brush with remaining honey mixture to keep nicely glazed. Serve.

Easy Broccoli Soup Recipe

I always make sure I have frozen vegetables in my freezer. It a quick way I can increase nutrient value of any meal, especially during the days I don’t feel as creative. Soup is great way I can sneak vegetables in my kid’s meals without any need for me to convince them to try it. This recipe is an easy but delicious companion to a side of meat or fried food.

INGREDIENTS
2 lbs broccoli flowers
2 cups chicken or vegetable broth
1 medium onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
½ tsp salt
½ tsp freshly ground pepper
1 teaspoon thyme or parsley
2 tbsp butter
1 cup all-purpose cream or milk of your choice

DIRECTIONS

Blanching: Bring a pot of water to a boil and add salt. Put frozen broccoli directly in the water (no need to thaw!) and simmer for 2 to 4 minutes until they become bright green and tender.

Drain and using a food processor or a blender, puree the broccoli by batches until smooth.

On the same pot, melt butter and sauté the garlic, onion and celery. Add chicken broth or vegetable broth and season with salt, pepper and thyme or parsley. Lower heat to medium and let the flavors marry together simmering for 2 to 3 minutes.

Switch to low heat and add in the broccoli puree. Add in 1 cup all-purpose cream or 1 cup milk of your choice and let simmer for another minute. Serve on the side of grilled cheese sandwich, or meat dishes.

Try these different versions!
Gluten Free: Use gluten free broth
Vegan: Use rice milk, oat milk, coconut milk
Hearty Version: Add chicken and cubed boiled potatoes

Whole Leaf Spinach, Broccoli and Brussels Sprouts: It’s not easy to find these especially locally as our weather in Manila is not really conducive to these delicious greens. But great news! These are available all year round at GERALD.ph and for a limited time only, we are offering you these Best Selling Vegetables at 20% OFF!

These are processed and flash frozen directly upon harvest. Flash Frozen vegetables are even better than fresh ones that are prematurely cut and will tend to lose their vibrance travelling from farm to your table. These vegetables are harvested only from the ground when they reach their proper maturity naturally, where their taste and quality and nutritional content are optimal.
