USDA Choice Tenderloin Steaks

Tenderloin steaks are one of the most lean cuts of beef. Often used in carpaccio, beef stroganoff, and filet mignon. This grade has just enough marbling to stay juicy and full of flavor and is said to be one of the most desired steaks. Excellent source of protein and B vitamins, too.

USDA Choice is the second highest rating a beef can have - it has slightly less marbling than Prime beef, but the same delicious flavor and tenderness.


Thawing

Take the steaks out of the bag, place them in a dish covered with cling film and let thaw for 6 hours.

Cooking

Pan: For rare, place the meat in a hot pan with a little oil or on the grill and cook over high heat for 1-2 minutes on each side. For medium, cook over high heat for 1 minute on each side then cook over medium heat for 2-3 minutes on each side.
