Here is a veggie recipe that pairs well with beef paupiettes!
1 green bell pepper
2 tbsp olive oil
1/2 garlic clove
1 tsp herbes de Provence
Salt and pepper
Wash the veggies and chop them thinly.
Press the garlic and mince the onions.
Heat olive oil in a pan over medium heat.
Cook the zucchini and eggplant until brown.
Remove from pan and set aside.
On the same pan, saute onion, garlic, and herbs.
Add in the cooked zucchini and eggplant.
Press the tomato to pour over its juice then add it in the mix.
Stir regularly to avoid sticking of the veggies to pan.
Season with salt and pepper at the end of the cooking.
