How to Cook a Rack of Lamb

Oven:

  1. Preheat oven to 450°F (232°C).
  2. Rub the rack with herbs and seasoning.
  3. Roast evenly on all sides.
  4. Cook to 155°F (68°C) for medium or 160°F (71°C) for medium-well.
  5. Rest for 5 minutes before slicing.

Recipe Tip: Try a herb-crusted rack with garlic and Dijon mustard for a gourmet finish.

Recipe: Herbed Rack of Lamb

whole rack of lamb
1 teaspoon vegetable oil
1 1/2 tbsp extra virgin olive oil
3 large cloves of garlic, minced
4 tbsp parsley herbs
1 tbsp meat herbs
2 tsp tarragon herbs
Salt and ground black pepper

Directions

Rub lamb meat with salt and pepper.
Heat a heavy-duty pan over high heat.
Add oil and cook the rack until browned on all sides.
Mix garlic, herbs, olive oil, salt, and pepper in a bowl.
Spread the mixture all over the lamb meat.
Roast on a pre-heated oven in the center.
Flip and roast to cook evenly until golden brown.
Remove from the oven and let sit to rest.
Slice the ribs to serve.
